Title: Mango Mayonnaise [Also Apple and Avocado] [Tack]

1/2cMango, chopped
1/2cMayonnaise
1tbLemon juice
1tbMustard, grainy type
2tbBasil, freshly chopped
  [or freshly chopped mint]
  ===APPLE MAYONNAISE===
1/2cApple, pureed
1tbHorseradish, freshly grated
  ===AVOCADO MAYONNAISE===
1/2cAvocado
1tbTomato sauce
1dsTabasco

Puree mango in a blender with half the mayonnaise. Stir in the remaining mayonnaise with the lemon juice, mustard and herbs.

Serve with cold poultry. ***********************VARIATIONS********************************** ~APPLE MAYONNAISE- Substitute pureed apple for the mango, use mint rather than basil, and use grated horseradish instead of the mustard for a sharper contrast. This is delicious with duck.
